Zucchini Chips
These were a nice crunchy alternative to a fried veggie craving. And to be honest you can use this batter recipe with anything you'd like to fry
The goods:
Sliced zucchini
Almond flour
Egg
Healthy oil (I use sunflower oil)
Seasonings to taste
Basically:
Heat the oil up
Mix your dry ingredients to taste
Dip those zucchinis in some scrambled eggs and then in the dry.
Fry those suckas until brown!
Enjoy!
Quick Paleo Snack
These are so simple and so yummy! They are perfect for when your craving a warm cookie straight out oven but don't have the time. You may have seen this trick at your local Japanese habachi place.
Cinnamon Banana Rings
Ingredients:
Banana
Honey
Cinnamon
What to do:
Slice yo bananas and....
Throw it all together to taste in a pan on medium!!
Holy moly these are yum! Enjoy!
Quick & Easy Paleo Coconut Shrimp
This recipe comes from my primal baby sister all the way from the panhandle of Florida!
What you will need
*shrimp
*coconut flour
*unsweetened shredded coconut
*coconut oil
*pineapple
Whatcha do
1.) Melt some coconut oil in a pan to fry oil heat standings
2.) Clean your shrimp
3.) Batter your shrimp in a mixture of the coconut flour and shredded coconut
4.) Place in the pan and fry until brown
5.) Squeeze some pineapple juice on them and serve
I haven't tried this yet but man that is simple!! Too bad I live in a house with a caveman that hates sea creatures! Enjoy guys!!!
Paleo Zucchini Brownies
Yes! Yes!! Yes!!! I freakin frappin did it! I made a rich chocolate dessert that will help your body not harm it! Not only are they freaking delicious but the non primal people around you will eat them because of curiosity and they will be in love. Now are they a pillsbury brownie? No. They have more of a cakey texture. But who the hell cares? It's zucchini and almonds that taste like a freaking brownie!
Now I tweaked this one a bit too and added 1 tablespoon of cocoa and a handful of walnuts.
Here are some pictures of the process and the recipe to follow!
What you will need:
- 1 cup of almond butter. You can make your own if you want to save a few bucks.
- 1 1/2 cup of grated or chopped zucchini. I used a shredder and then choppit up into really small pieces.
- 1/3 cup of raw honey
- 1 egg
- 1 tsp of vanilla
- 1 tsp of baking soda
- 1 tsp of cinnamon
- 1/2 tsp of nutmeg
- 1 cup of dark chocolate chips. I used gluten free chocolate chips.
- Preheat oven to 350 degrees.
- Combine all the ingredients into a large bowl and mix everything together.
- Pour into a greased 9x9 baking pan.
Paleo Banana Nut Bread
I found this recipe only and tweaked it a bit. I added a little extra cinnamon because I didn't have any nutmeg. And I subbed the cocoa chips for chopped walnuts! But all in all this was a huge success in an attempt at a healthy Paleo bread. My primal boyfriend and non primal restaurant coworkers though they were amazing so I am passing this recipe along!

Ingredients
- ½ cup coconut flour
- ½ cup almond flour
- 1 cup very ripe banana mashed well with a fork (2-3 medium bananas)
- ½ cup butter melted + extra butter unmelted for greasing (preferably grass-fed or you could sub with coconut oil but it’s way better with butter)
- ¼ cup cacao nibs
- ½ teaspoon cinnamon
- ¾ teaspoon baking soda
- ¼ teaspoon no additive liquid stevia or ¼ cup honey (can increase honey all the way up to ⅓ cup of honey or ½ teaspoon of liquid stevia but I wouldn’t recommend going above ⅓ cup of honey or ½ teaspoon liquid stevia in terms of sweetness)
- 4 eggs
- ½ teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the oven to 350 degrees and grease a 8.5 x 4.5 loaf pan with butter and place a cut bit of parchment paper that fits in the bottom of the loaf pan inside it flat on the bottom.
- In a medium sized bowl combine the coconut flour, almond flour, cinnamon, baking soda, cacao nibs, and pinch of salt and mix with a fork to reduce any clumps until thoroughly combined.
- In a small bowl add eggs, vanilla extract, stevia or honey and whisk then add mashed banana to the egg mixture and whisk more until well combined.
- Pour the liquid ingredients into the dry and stir with a spoon until thoroughly combined then add melted butter and continue stirring until well incorporated.
- Spoon all of the bater in your greased loaf pan and spread it out evenly with a scraper and shape it in any way you want (specifically in the shape of a loaf so that it rises like that)
- Place in the oven for 40-45 minutes or until the center is pierced with a toothpick and the toothpick comes out clean.
- Pull out of the oven and let it cool slightly (only for a minute or so) then carefully run a knife along the edges to make sure nothing is sticking and cautiously invert it onto your hand or a wire rack and flip it so the bottom is laying flat on the wire rack and let it cool for 20-30 minutes. (if you can wait that long)
Notes
This is amazing sliced and toasted with butter in a pan. Just turn a pan to medium heat and add a butter pat to the pan and let it melt slightly then add the bread and swirl it around on both sides until it’s toasted to your liking. Crisy-edged, warm and buttery goodness.
Paleo? Primal? What does it all mean?
Here's my history post on the Paleo lifestyle. (Notice my strong will to use the word lifestyle and not diet?)
Basically being "paleo" means to eat the way our ancestors did in the Paleolithic era. In the Stone Age they could only eat what they could hunt and gather. This was before man made foods like wheat, corn, cheese, and of course that prepackaged shit we find at local grocery store.
Lets take a step back and think about what that includes: Meats of every sort, fatty and none fatty. Vegetables and berries. Nuts....hmmm....well that's it? Yep that is it! And you will be surprised how far those things will take you living primal.
But wait, what about the health benefits? Will I lose weight? And how?
Since we took a step back into the world of Little Foot and Ducky, lets stay there for a minute and think about humans health then and our health in 2013!
Let us all be honest and agree that not one of us can picture an obese caveman (Fred being an exception). They couldn't be anything but fit. Survival of the fittest was so present at that time that they had to be all lean so they could move fast, fight, and survive! Think of all the health diseases human struggle with daily. Diabetes, high blood pressure, high cholesterol, high blood pressure, gut issues, chrones disease.
So what is obvious in America? We need to change the way we eat!
We have not evolved to be the strong human being that our cave ancestors set us up to be.
Some daily things you will notice living primal are more energy, better sleep, and less aches!!
HEY BRITTANY! I WHAT ABOUT WEIGHT LOSS! I CAME HERE TO LOOK GOOD NAKED!
Do not fret! While I do consider weight-loss to be a huge benefit of this lifestyle, I think it's 50/50 with the health benefits too! But you will lose weight! Grains are demons that go in through your mouth and live in your ass!
Here's a quick explanation, I am not a nutritionist, scientist, or college graduate.
When you need energy your body either burns carbs, sugars, or fat. So when you eat carbs and sugars and you need energy to get through your day, instead of burning fat it will burn those first. When you keep carbs and sugars down to a minimum (as the carbs from the veggies you eat or sugars from the fruits) then your body is automatically going to start burning fat!

And when in doubt check the label! No grains is a must in everything I buy! No rice flour or corn meal! Don't think you can buy "gluten-free" pastas, rice flour! Rice is a grain! Think in that process when it comes to grains. But the rule of thumb is : ONLY EAT WHAT YOU CAN HUNT AND GATHER!

Self Loving Introduction Post
Hello Internet.
The first step to success in my life is writing about it. Constantly! From lists, notes, journals, or yes, facebooking (is that a word yet?) Unfortunately I am terrible at grammar and a procrastinator so I encourage you to correct my grammar and request blog posts about whatever you desire! Helping you will help me, you see?
Most of you that will start following my blog will know most of my story. For those of you stumbling here by the grace of the Internet gods here are the basics about me, then I will move on to why I chose to live a Paleo inspired lifestyle and hope to for the rest of my life.

And here are what most of you are looking for, why I decided to live Paleo.
Last year I started working with a local weight loss nurse practitioner. My first ever sit down secretary job after 5 years of restaurants! After battling with my weight since 18 I decided to give her my ear and an open mind. Boy was I in for a ride. No grains, no sugar, no dairy! Every day, all day! Fully committed I went from 140 to at my lowest 119 in only 3 months! I went from a size 12 to 2 in jeans! I was feeling fabulous and looking it too! Single and ready to mingle I was getting double takes just riding in my truck!!
When I hit my goal in my health, I had also hit my goal (or should I say jack pot) in finding my soulmate. What a perfect combination! Not!!! We were happy and thin and took a total fuck it attitude when it came to food. Big mistake! While I can blame it on us getting comfortable or eating a few too many munches at night, I had jumped right back into my size 12 jeans with pouch falling off the sides.
So here I am world! I'm ready to eat clean everyday! I'm ready to feel better, more energized, and more confident! The only way I know how to do that is to go back to living my Paleo lifestyle and documenting every step of the way!
