No cooking tonight


I'm lazy. No cook!! Sonoma chicken salad from whole foods. Yum

Zucchini Chips



These were a nice crunchy alternative to a fried veggie craving. And to be honest you can use this batter recipe with anything you'd like to fry

The goods:
Sliced zucchini
Almond flour
Egg 
Healthy oil (I use sunflower oil)
Seasonings to taste

Basically:
Heat the oil up
Mix your dry ingredients to taste
Dip those zucchinis in some scrambled eggs and then in the dry.
Fry those suckas until brown! 



Enjoy! 

Quick Paleo Snack



These are so simple and so yummy! They are perfect for when your craving a warm cookie straight out oven but don't have the time. You may have seen this trick at your local Japanese habachi place. 

Cinnamon Banana Rings

Ingredients:
Banana
Honey 
Cinnamon

What to do:
Slice yo bananas and....
Throw it all together to taste in a pan on medium!!

Quick & Easy Paleo Coconut Shrimp

This recipe comes from my primal baby sister all the way from the panhandle of Florida!

What you will need

*shrimp
*coconut flour
*unsweetened shredded coconut
*coconut oil
*pineapple

Whatcha do

1.) Melt some coconut oil in a pan to fry oil heat standings
2.) Clean your shrimp
3.) Batter your shrimp in a mixture of the coconut flour and shredded coconut
4.) Place in the pan and fry until brown
5.) Squeeze some pineapple juice on them and serve

I haven't tried this yet but man that is simple!! Too bad I live in a house with a caveman that hates sea creatures! Enjoy guys!!!


Paleo Zucchini Brownies


Yes! Yes!! Yes!!! I freakin frappin did it! I made a rich chocolate dessert that will help your body not harm it! Not only are they freaking delicious but the non primal people around you will eat them because of curiosity and they will be in love. Now are they a pillsbury brownie? No. They have more of a cakey texture. But who the hell cares? It's zucchini and almonds that taste like a freaking brownie!
Now I tweaked this one a bit too and added 1 tablespoon of cocoa and a handful of walnuts.
Here are some pictures of the process and the recipe to follow! 



What you will need:
  • 1 cup of almond butter. You can make your own if you want to save a few bucks.
  • 1 1/2 cup of grated or chopped zucchini. I used a shredder and then choppit up into really small pieces.
  • 1/3 cup of raw honey
  • 1 egg
  • 1 tsp of vanilla
  • 1 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1 cup of dark chocolate chips. I used gluten free chocolate chips.
Directions:
  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients into a large bowl and mix everything together.
  3. Pour into a greased 9x9 baking pan.

Paleo Banana Nut Bread



I found this recipe only and tweaked it a bit. I added a little extra cinnamon because I didn't have any nutmeg. And I subbed the cocoa chips for chopped walnuts!  But all in all this was a huge success in an attempt at a healthy Paleo bread. My primal boyfriend and non primal restaurant coworkers though they were amazing so I am passing this recipe along!

Ingredients
  • ½ cup coconut flour
  • ½ cup almond flour
  • 1 cup very ripe banana mashed well with a fork (2-3 medium bananas)
  • ½ cup butter melted + extra butter unmelted for greasing (preferably grass-fed or you could sub with coconut oil but it’s way better with butter)
  • ¼ cup cacao nibs
  • ½ teaspoon cinnamon
  • ¾ teaspoon baking soda
  • ¼ teaspoon no additive liquid stevia or ¼ cup honey (can increase honey all the way up to ⅓ cup of honey or ½ teaspoon of liquid stevia but I wouldn’t recommend going above ⅓ cup of honey or ½ teaspoon liquid stevia in terms of sweetness)
  • 4 eggs
  • ½ teaspoon vanilla extract
  • pinch of salt
Instructions
  1. Preheat the oven to 350 degrees and grease a 8.5 x 4.5 loaf pan with butter and place a cut bit of parchment paper that fits in the bottom of the loaf pan inside it flat on the bottom.
  2. In a medium sized bowl combine the coconut flour, almond flour, cinnamon, baking soda, cacao nibs, and pinch of salt and mix with a fork to reduce any clumps until thoroughly combined.
  3. In a small bowl add eggs, vanilla extract, stevia or honey and whisk then add mashed banana to the egg mixture and whisk more until well combined.
  4. Pour the liquid ingredients into the dry and stir with a spoon until thoroughly combined then add melted butter and continue stirring until well incorporated.
  5. Spoon all of the bater in your greased loaf pan and spread it out evenly with a scraper and shape it in any way you want (specifically in the shape of a loaf so that it rises like that)
  6. Place in the oven for 40-45 minutes or until the center is pierced with a toothpick and the toothpick comes out clean.
  7. Pull out of the oven and let it cool slightly (only for a minute or so) then carefully run a knife along the edges to make sure nothing is sticking and cautiously invert it onto your hand or a wire rack and flip it so the bottom is laying flat on the wire rack and let it cool for 20-30 minutes. (if you can wait that long)
Notes
This is amazing sliced and toasted with butter in a pan. Just turn a pan to medium heat and add a butter pat to the pan and let it melt slightly then add the bread and swirl it around on both sides until it’s toasted to your liking. Crisy-edged, warm and buttery goodness.
